Tomato Harvest

What a tomato growing year! We hear reports of tomato plants reaching 6’ heights.  We are carrying a spray free,  heirloom tomato sourced from Bayside Farm in the Valley.  Absolutely gorgeous and delicious.

So, we heard about grating fresh tomatoes and decided to try it.  Common in Greek cooking, grating is as simple as cutting a thin slice from the stem end and grating away.  This leaves the skin remaining in your hand and juicy skinless pulp ready for use.  So if blanching and peeling is not your thing give grating a try.

Tomato Recipe

Fresh Tomato Sauce

Grate a quart of fresh ripe tomatoes into a bowl.  Then grate an onion, a garlic clove, and a sweet pepper on top of the tomato pulp.  Heat in a sauce pan and add fresh herbs – basil, thyme, chives, oregano all work.  Serve over pasta.  Preferably a pasta that can hold the delicious juices like penne or macaroni.

Preserving Herbs

Time to harvest your herbs at the peak of their flavor.  Drying, freezing, herb vinegars and oils are all great options. Try chopping your herbs and putting them in an icecube tray.  Fill ¾ of the way with water and freeze.  The next day fill the tray with water and freeze again.  When solid, put the cubes in a bag. Then simply add them to soups and sauces.

Late Summer Garden Colour

Our garden mums are available in bright yellow, burgundy and rust.  New this year are potted asters.  Brightly coloured potted peppers can easily be added to tired planters as we transition to fall. Drop in for lunch and walk through our greenhouse for some inspiration.

Valley Fruit
